Training the unemployed in catering trades

Dear Difteur-ses,
La Table de Cana Valence continues to grow! We're delighted to announce that a person we've been supporting for a year and a half now has signed a permanent contract as a kitchen assistant in an Ehpad. She starts next week. So this is our second positive outcome, and we've achieved our goal! At the same time, we're continuing to help her pass her driving test.
We're continuing our action and are currently in the process of recruiting two kitchen assistants to replace the departure and expand.
We've also finalized the balance sheet for 2024, so I can announce that for this first year of business, we:
- Made €215K in sales excluding VAT.
- Served 2,900 meal trays.
- Made 47,000 cocktail pieces.
- 11,400 people were able to sample our cuisine!
The customer feedback is all very positive. But we're not yet profitable, so we need to find even more customers! Don't hesitate to spread the word.

A look back at our annual seminar in Lyon!
Dear colleagues,
Our annual seminar was held on 17 and 18 October in Lyon.
This meeting was located at mi parcours de la decade 2020-2030to assess the current state of the network The Cana Tableand take stock of the momentum of the plan 2030 with the ambition to have 30 implants on that horizon.
Three topics have mobilized us: Insertion, the catering businessand the dynamics of the Plan 2030.
The dialogue was fruitful between the 10 current members of the network and the new future entrants:Nanteswhich has just been integrated, then Paris Centre, Stairs, Grenobleand Montélimarwhich are in the process of being accompanied to become members by the end of the year and during 2025.
Two Lyon-based consultancies have assisted us pro bono in our work:Food Service Visionand Optim Ressources. Their contributions were essential to the success of these days and we thank them warmly.
We leave with a energy and cohesion unmatched. We are increasing our collective strength tenfold to further serve our raison d'être of increasing the number of people in workforce integration through the food trades nationally 🚀

La Table de Cana, a little history... and numbers!
La Table de Cana is a national network of 9 work-integration companies spread across France. These companies are all independent of each other. Most have been in existence for over 15 years, with the first one opening its doors in 1985 in Antony on the initiative of a Jesuit priest who wanted to help the homeless back into stable, rewarding employment.
Thanks to you and your support, La Table de Cana Valence was able to open its doors this year! We currently employ 1 manager on a permanent contract and two people on work integration schemes. But this is just the beginning! Thanks to you, our other supporters and our customers, we plan to operate with 7 to 8 people on work-integration schemes. Eventually, this will mean around ten people a year will be trained in the kitchen trades and will be able to find work again!
This great project is still in its infancy! And to make it work, we still need your help! Thank you for all the help you've already given us.

A table !
La Table de Cana Valence served its first sit-down meal last week! A great experience for our employees in integration who experienced the fire and the stress of the heat stroke. What a joy to see a tear of pride on their faces when the whole room applauded them at the end of the meal! Cream of white asparagus, green asparagus and parmesan potato chips for starters, Fillet of sea bream with vanilla sauce and seasonal vegetables, and a pistachio cream Financier to finish off the meal. We'll let you be the judge!

Finally, the Table de Cana project in Valence is taking shape! After a few not always easy months, looking for financing, drawing up plans, finding premises...
In fact, over the last few months, we've been able to:
- Validate the plans
- Recruit a head chef
- And above all, get the ball rolling on the project!
So, work began in early October and should be completed by mid-December. This means we'll be able to start production before the end of the year.
So, for the month of December, we'll be recruiting two people on integration schemes to start with. Then a third from the start of 2024!
